Scamorza is a cow’s milk, spun paste cheese belonging to the “pasta filata” family. Shaped similar to provolone in a pear shape, it is available in many other forms as well. It is a semi-soft cheese with a texture comparable to that of a firm, dry mozzarella but more piquant. Scamorza is used as a substitute for Mozzarella as it imparts more interest in the recipe. Since Scamorza has excellent melting qualities, it is best known for flavouring baked dishes, for griddling or topped with prosciutto for extra zest.

Gioia Cheese’s main resource is excellent organic cow milk. Through the years we traveled to Jawa, in the Malang area, and found our trusted non-intensive farms, where cows are only grass-fed with no antibiotics.
No preservatives, chemicals or speed up agents are involved in the production process. We only use non-animal rennet which makes our cheeses not only 100% natural, but also totally suitable for vegetarians.
